Current developments and strategies of modern sensory analysis of foods will be presented. In the final of the International DLG Sensory Analysis Award 2018 competition, junior scientists will be explaining their research projects in a poster session and via short presentations.
The DLG (German Agricultural Society) plays and important role as a catalyst for the food industry in the fields of innovation, technology and quality. The forums that accompany the trade fair, which each comprise three or four specific lectures are being staged again this year. They are a fixed part of the program for many of the Anuga FoodTec visitors.
The forums – this time with three focuses – offer the opportunity to discuss current and international themes with experts.
Among this year’s themes, we can find “Forum Resource Efficiency”, “Topics, Trends, Technologies – What’s moving today’s Food Industry” or Forum Food Ingredients.
The trade fair will show the options existing today for granulating, coating, encapsulating, agglomerating and producing instant ingredients. The trade fair has a dedicated food ingredients component, the main focus of which will be found on the Boulevard of the trade fair.
When it comes to customizing functional ingredients, fluid bed granulation is one of the state-of-the-art methods, organizers anticipate
The multifunctional systems are capable of doing even more than just producing agglomerates with optimum solubility: They are able to integrate vitamins, minerals and fruit aromas into a stable matrix. A micrometer thin layer comprising of maltodextrin and starch efficiently protects the ingredients that are sensitive to oxidation against outer influences such as light and oxygen. The microcapsules don’t release their embedded contents until the food is eaten. A prime example for this is the encapsulation of natrium chloride in a fine shell made of fat. The coated grains of salt form concentrated salt spots in food.
Leading experts will grant an insight into the latest developments in the scope of interesting lectures and presentations. In this way, the “Food Ingredients” Forum from Tuesday to Friday will be dedicated to current themes such as clean labels, personalized diets, texture design and enzymes in food production as well as the product reformulation possibilities for exchanging and reducing sugar, salt and fat.
Guided Tours are a good chance to obtain a compact and informative overview on each sector present at Anuga FoodTec. In the course of the roughly hour-long tours, exhibitors will take approx. 10 minutes to show and explain to you their innovative products and optimal solutions. Among the tours, each focusing on different themes, baking professionals can benefit from themes like “Industry 4.0”, and “Filling and Packaging Technology”.
This is an opportunity for Anuga FoodTec exhibitors introduce themselves.
They can take advantage of this second platform to present their company, their product range and/or their innovations to a wider professional audience. The program is available here: http://www.anugafoodtec.com/aft/trade-fair/events/speakers-corner/index.php
Testing and Certification for the Food Sector
The DLG is the international leader in designing and carrying out tests that define a wide range of quality, performance and value criteria for an extensive variety of products and services in the food and farming sectors. The “DLG award-winner” label for food manufacturers stands for experience, competence and credibility, and every year the society assesses about 30,000 domestic and international foodstuffs in quality inspections to establish if they qualify. DLG experts will be available on the stand at Anuga FoodTec to provide more information about the food tests and other services in the fields of quality management and certification.
Digital Food Services: DLG Food DataHub
Digitization poses new challenges for food producers and retailers, and it is expected that high-quality digital information will play an increasingly important role for manufacturers and their products in the future with regard to, for example, quality assurance, inventory management systems and new sales channels. Rapidly growing e-commerce, for example, with its automated data flows, requires digital professionalism from all concerned in every transaction. The DLG’s Food DataHub offers individual solutions for flexible digital information management, from the administration and care of data to the intelligent and secure networking of business platforms.
DLG Academy: New Training Offers
