From September 23 to 26, südback will host technological innovation for bakers and confectioners in Stuttgart, Germany. The focus is on digitalization, applications for controlling existing equipment and analyzing efficiency.
MIWE will showcase the MIWE roll-in e+ 3.0, an oven equipped with versatile features that combine a wide range functions, aiming to simplify the baking process.
Special features include the wireless core temperature sensor, which allows for continuous measurement of the core temperature in rack ovens for the first time. As a result, baking programs can be optimized so that products (especially difficult products, such as cheesecakes or tin loaves) are always thoroughly baked (meaning they have reached a certain core temperature) without sacrificing moisture content, which affects subjective perceptions of freshness. In addition to this innovation, which the MIWE live baking team will demonstrate with cheesecakes, other functions, from the massive heat storage wall to MIWE delta baking and “Atmospheric Baking” (recipient of the 2016 südback Trend Award) can also be experienced live.
DEBAG will present its Baking 4.0 range of baking technology.
DEBAG’s innovative software for oven control and networking facilitates oven operation. It ensures consistently high quality in bakery products, enhances process control and helps to save on energy costs, the company explains. Whether there are 10 trays or just one in the oven, SmartBake ensures that only as much energy as necessary is supplied.
The digital baking assistant VirtualBaker detects batch quantities in the oven and automatically selects the appropriate baking program.
Developed by PreciBake®, this system can be installed in selected DEBAG instore ovens.
Austrian bakery machine manufacturer Koenig will present its latest developments for industrial and commercial bakeries with daily demonstrations. Additionally, Koenig’s cooperation partner Cetravac will present solutions in the field of vacuum cooling technology.
The Menes dough sheeting line will also be presented, with its modular design allowing it to adapt to various product and customer needs. The Menes-H high-performance dough sheeting line can process up to 5,000kg of dough and can be combined with several other modules.
WACHTEL GmbH introduces a service-app that supports technicians in performing assembly operations, commissioning, maintenance, repairs and emergency services.
The digitalized job information collected by the app is accessible to view and analyze at any time. The app is also able to generate a comprehensive service report that is automatically emailed to service center, sales personnel and the customers themselves. “Receiving the invoice ensures a direct and logical connection to the relevant operation. If the customer is not on site, employees can use the “feedback function” for giving direct feedback,” according to the manufacturer.
WACHTEL uses the new service-app for sending installers to their customers to perform montages, maintenance orders or repairs.
Every installer is equipped with a tablet. “Using the app, we digitally record data instead of using paper”, explains Oliver Frey, CEO of WACHTEL GmbH. „By consistent use of the app, we ensure our customers constant quality in service performance. At the same time, managers are provided with control functions and an overview of the work on site – a significant breakthrough for the entire industry in the matter of digitalization.”
