Bread Ahead Expands Outside London with New Owner-Operator Model

Bread Ahead, an independent British bakery and baking school, is set to open its first bakery outside London in Harpenden, Hertfordshire, on October 12. The new location will also be the first to operate under the company’s new owner-operator growth model.

The 2,500 sq ft bakery, located at 92–94 High Street, will combine an artisan bakery, baking school and all-day dining destination. The site will offer Bread Ahead’s artisan breads, pastries and doughnuts, alongside breakfast and brunch products.

The new owner-operator model is designed to give long-standing Bread Ahead employees the opportunity to progress into ownership and receive a share in the success of the bakery they operate. According to the company, the approach will support its expansion while creating a network of experienced operators with existing knowledge of the brand and connections to their local communities.

Harpenden will be the first location to implement the model, with a long-standing member of the Bread Ahead team set to become the bakery’s owner-operator. The company is also considering further expansion across regional and market towns in the UK.

Matthew Jones, Founder of Bread Ahead, stated: “For me, growth should be about more than simply opening more bakeries. We’re still an independent business and our people and our products are at the heart of everything we do. If someone has the talent, determination and ambition to run their own bakery, I want us to be able to give them that opportunity.”

Baking education will also form part of the new location, with a dedicated classroom on the upper floor for hands-on workshops and private events. Workshop bookings for January 2027 are expected to open ahead of the new year.
