Dawn Foods, a global leader in bakery manufacturing and distribution, announced the launch of a vegan sponge cake mix. The Dawn Balance Vegan Sponge Cake Mix is V-label certified, in alignment with the rest of the Dawn vegan range, and provides the same functionality, texture and taste experience as a regular sponge cake mix.
Sponge cakes are very light and airy types of cakes. The challenge in making a good vegan sponge is the high amount of eggs used (approximately 40%) to get that typical soft, light, fluffy and airy texture. Dawn’s R&D team used their development experience gained from the successful Vegan American Mixes in the company’s portfolio and developed a Vegan Sponge Cake mix with good batter structure and aeration, like any normal sponge, but without the eggs.
