MIWE Expands Automated Baking Control with Latest Flexbake Version
MIWE America has introduced the latest version of its MIWE flexbake® oven control technology, designed to automatically compensate for variations in baking conditions that can affect product consistency.
The system monitors baking against parameters established for a product under a full oven load. When conditions deviate from those settings, flexbake automatically adjusts the baking chamber temperature in an effort to maintain the intended baking result.
According to MIWE, the technology is intended to compensate for variables including partially loaded ovens, differences in dough temperature and changes in ambient conditions. The system is aimed at reducing the effect of process fluctuations and operator error on finished product quality.
Flexbake stores the baking program established for each product and uses this as the reference point for subsequent batches. The technology can then recognise deviations from the programmed conditions and modify oven temperature accordingly.
The system is available across several MIWE oven platforms. The company said flexbake is included as standard on the MIWE econo convection oven, the MIWE FreshBakeCenter retail oven and the MIWE roll-in e+ production rack oven, among other models.
MIWE is positioning the technology for applications ranging from industrial and retail bakeries to foodservice operations where maintaining repeatable baking results across changing batch sizes and operating conditions is required.
The company is also offering demonstrations of the technology at its live baking centre at MIWE America’s headquarters in Middlesex, New Jersey.
