dsm-firmenich has unveiled a new range of ModulaSENSE maskers designed to optimise the sensory experience of products formulated with Vertis CanolaPRO, its rapeseed-based protein isolate. The launch supports the development of ready-to-mix (RTM) drinks and protein bars that deliver both nutritional and sensory appeal.
Developed using receptor-based technology, the ModulaSENSE maskers work at the molecular level to neutralise off-notes such as bitterness, astringency, and licorice-like flavours commonly associated with plant proteins. This innovation enables food manufacturers to incorporate higher levels of Vertis CanolaPRO without compromising on taste.
Vertis CanolaPRO is a complete, allergen-free plant protein with a protein digestibility-corrected amino acid score of one. Derived from an upcycled canola oil production stream, it offers solubility, foaming, emulsification, and gelation functionality, making it a versatile and sustainable ingredient for food and beverage applications.
The new ModulaSENSE maskers are now available in North America, with a European launch scheduled for September 2025. While initially targeting RTM drinks and protein bars, dsm-firmenich plans to expand the technology’s application across other product categories.
