Win-Win Launches Cocoa-free Bake-stable Chips for Bakery and Foodservice

London-based food tech company Win-Win has expanded its portfolio with the launch of a cocoa-free, bake-stable chocolate chip range aimed at professional bakers and foodservice operators.

The new chips are designed to retain their shape at high baking temperatures without melting or spreading, offering consistent performance in applications such as cookies, brownies and muffins. Following internal testing, the company said the chips are resistant to spreading, burning and fat bloom during baking.

Initially available in a milk-style variant, with white and dark versions planned, the chips are supplied in 10kg packs and have a 12-month shelf life to support large-scale bakery operations.

Win-Win produces its cocoa-free alternative by reworking the traditional chocolate fermentation process, using ingredients such as rice and carob to create couvertures and compounds that aim to replicate the taste, texture and functionality of conventional chocolate. The products are manufactured in the UK using standard chocolate-making techniques, including roasting, grinding, refining and tempering.

According to the company, the cocoa-free formulation uses up to 80% less water and generates up to 80% fewer CO2e emissions compared to conventional chocolate production.

The launch marks a further step in the company’s expansion into commercial bakery and foodservice channels in the UK, with ambitions to scale across the EU and other international markets.
