Magic Macarons Made in Hong Kong

Guests at this year’s Hong Kong International Bakery Expo are in for a real treat, in addition to all the opportunities the show has to offer this December 4-6, and it comes in the form of macarons provided courtesy of a bakery based in the Kwun Tong district of Hong Kong and now,for third the time and since the company’s opening, a sponsor of the annual event: Hami Bakery. We spoke with Hami Cheung to learn the story behind the baking trays of these colorful sweets.

It started with a blog. Hami Cheung is the founder and baker of the bakery that opened for business in November 2012. Hami Bakery sells preorder macarons and organizes bakery courses for confectionery enthusiasts, having contributed to the popularity of the French delicacy with a custom-made Asian twist. The Hong Kong-based baker has a current production capacity of up to 800 macarons, 500 cartoon-shaped macarons, 600 cupcakes and 1500 cookies per day.

“We are working hard to improve our capacity,” Hami Cheung said of her plans.

About 80 per cent of the business revolves around the colorful macarons, including different flavors and designs ranging from action figures to cartoons or holiday themes, which are the main product sold as well as the major topic of the classes they teach. Hami’s also bakes cupcakes, chocolate and various cookies. They also receive custom orders for products with company themes or logos for events, from clients including electronic, fashion and cosmetic brands such as Sony, Harvey Nichols, Casio, Lee Jeans, Neutrogena, Bobbi Brown, Sofina and more.
