Noma and Novonesis Partner to Redefine Flavor Through Biosolutions

Copenhagen-based Noma, long celebrated as one of the world’s most influential restaurants, has announced a global partnership with biosolutions leader Novonesis to develop flavors and food products that are healthier, more sustainable, and exceptionally delicious.

The collaboration brings together two world-class experts in fermentation—Noma, known for pioneering new flavor dimensions in fine dining, and Novonesis, which applies microbiological science to enhance taste, nutrition, and sustainability across global food industries. Together, they aim to merge culinary creativity with biotechnology to transform how the world experiences food.

“We need to inspire the world to eat in new ways, and I believe that flavor is the change factor for this,” says René Redzepi, Founder and Co-Owner of Noma. “Deliciousness is our superpower at Noma, and in partnership with Novonesis, we can take our imagination, our knowledge, to unlock incredible new flavors and bring them to people’s homes around the world.”

Merging Culinary Art and Food Science

The partnership sits at the crossroads of biology, science, and gastronomy, with the ambition to take innovations from lab benches and test kitchens to everyday dining tables. It will explore the role of biosolutions in developing new products under the Noma Projects brand, while demonstrating how microbiology and fermentation can deliver more natural, nutritious, and flavour-forward food solutions.

Fermentation lies at the heart of both partners’ expertise. “Without fermentation, Noma would be a very limited version of itself,” Redzepi noted. Novonesis, with over a century of experience in industrial fermentation, supports global food manufacturers in enhancing sweetness, umami, and texture through bio-based ingredients.

The first co-developed products showcasing the partnership’s potential will debut at Gulfood Manufacturing in Dubai from 4–6 November, offering an early glimpse into how flavor, science, and sustainability can come together to shape the future of food.
