Dawn Foods, a global leader in bakery ingredients, is enhancing its Royal Steensma product line in the U.S. with the launch of two new compound coatings: Blueberry Compound Coating and Hard Set Milk Chocolate Compound Coating. Following its 2024 acquisition of Royal Steensma, Dawn Foods now offers an expanded range of premium coatings and almond paste, catering to the needs of artisanal bakers. Both new products will be available in the U.S. starting March 2025.
The Blueberry Compound Coating is the latest addition to the Royal Steensma Souplesse line—a flexible, fat-based coating ideal for decorating and enrobing pastries and breads. Known for its easy melt, whip, and reuse properties, this new flavor expands the Souplesse range to seven varieties, offering bakers even more creative possibilities. It can be used as a drip for cakes or a smooth enrobing layer for pastries.
The Hard Set Milk Chocolate Compound Coating joins the existing Dark and White flavors, providing a creamy, versatile option for candy bars, truffles, cookies, and bonbons. This coating forms a rigid shell without requiring tempering, making it perfect for intricate designs and professional finishes.
