IBIE Preview: ECD Introduces the CakeOMETER Sensor

Part of Worldbakers’ IBIE SPECIAL EDITION 2022, we interview important exhibitors about what they bring to IBIE, so readers know what to expect at the Baking Expo that takes place between September 18-21, 2022, in Las Vegas. Today we interview Ray Pearce, Baking Product Manager, ECD Bakewatch.

ECD BakeWATCH will have several new products showcased at IBIE booth #5723. The newly-introduced CakeOMETER sensor for cake baking consistency will be shown live for the first time; its unique design overcomes challenges with accurately placing sensors in cake batter. BreadOMETER, ECD BakeWATCH’s S-Curve management sensor array for yeasted goods, has been redesigned to improve durability and deliver greater precision. And finally, the team is excited to preview a radically reimagined M.O.L.E. thermal profiler design and accompanying baking software. 

The US market represents nearly half of ECD’s baking business and the focus here is consistent with our global approach. The product line is designed to help manage baked goods’ thermal parameters through precise temperature measurements, data collection and analysis, and the establishment and maintenance of ideal baking conditions.

Like most market sectors, the baking industry is challenged with supply chain issues driven by multiple factors. Rising costs and available ingredient supply are putting the squeeze on even the most well-run operations. As for trends, we see the continued rise of what were once considered ‘boutique’ products such as artisan, gluten-free and clean label baked goods. Interestingly, these trends and the supply chain challenges both underscore the need for efficient production protocols. Optimizing ingredient use, extending shelf-life and maintaining equipment all serve to reduce costs, deliver high-quality products and ensure business continuity. ECD BakeWATCH offers precision measurement equipment and robust software for repeatable results that will help drive competitiveness and profitability.
