Dawn Foods has launched its 2026 Trend Report for Europe and AMEAP, offering bakery businesses new consumer insights designed to help translate changing purchasing behaviours into product development and growth opportunities.
The report builds on the company’s Global Bakery Trends initiative first introduced at the 2025 edition of iba in Düsseldorf. Drawing on research involving more than 3,000 consumers worldwide, the latest edition identifies four trends expected to influence the sweet bakery sector in the coming year: Sweet Connections, Elevated Indulgence, Simple Pleasures and Empowering Choices.
According to Dawn Foods, consumer expectations are increasingly shaped by lifestyle preferences, personal identity and the search for meaningful experiences. The company said bakery products are becoming more closely linked to values-driven purchasing decisions, social sharing occasions, nostalgia and demand for greater personalisation.
The report is intended as a practical resource for bakers, combining consumer research, market analysis and recipe concepts developed by Dawn Foods’ bakery experts. The company said the featured recipes demonstrate how emerging consumer preferences can be transformed into scalable commercial bakery products while maintaining a balance between creativity, craftsmanship and business viability.
“What we’re seeing is a fundamental shift in how consumers discover, experience, and connect with bakery products,” said Sarah Browner, Market Research & Insights Manager EU & AMEAP at Dawn Foods. “From digital-first discovery to more personalised and value-driven choices, these changes are redefining the category. This report brings those insights together, helping our customers stay relevant and create products that resonate in 2026 and beyond.”
According to Dawn Foods, the report is now available to bakery professionals across Europe and the AMEAP region, providing trend analysis, expert perspectives and product inspiration aimed at helping businesses respond to evolving consumer demand.
