Clean label ingredient specialist Ulrick & Short’s offers a wide range of Delyte fat reducers and replacers that are suitable as substitute ingredients for the majority of fats (including butter, oil and milk solids), while also enhancing the formulation with increased body and texture.
Aside from the benefits of reduced fat and calories, these starches can be used achieve texture in their own right thanks to their innate stability.
Delyte ingredients are suitable for an extensive range of products, in particular ganache, fillings, sauces and icings for confectionery.The fat content in processed creams such as confectionery fillings can be reduced by up to a third.
