FRITSCH Showcases Hygienic Pastry Line and Cooling Innovation at iba 2025

At iba 2025, FRITSCH is highlighting continuity and innovation with the debut of its new PROGRESSA pastry line, designed specifically for retail bakers. The line features a hygienic design with a strong focus on accessibility, rapid cleaning, and ease of use.

On stand D51 in Hall 12, visitors can explore FRITSCH’s full portfolio of dough processing solutions, with live demonstrations taking place four times a day. As part of the MULTIVAC Group, FRITSCH will also spotlight integrated packaging and automation solutions.

Building on the hygienic design principles introduced in 2023 with the IMPRESSA bread line, the PROGRESSA pastry line features smooth surfaces, watertight threaded connections, and rounded corners to prevent dirt accumulation. Key innovations include a linear quick-release mechanism for the belt, improved accessibility in confined spaces, and easily relaxed omega drives for swift cleaning beneath belts. A redesigned folding plough and lightweight, removable wrapping roller further enhance usability and reduce changeover times. The line is fully compatible with wet cleaning, enabling safe production of meat-filled pastries.

Also on display is the latest ROLLFIX prime dough sheeter, now equipped with a more intuitive controller for faster operation. Live bakery sessions will demonstrate the capabilities of both machines, with FRITSCH dough experts on hand to offer advice.

In collaboration with MULTIVAC, FRITSCH is also presenting the Cooling@Packing system—a new vacuum-based cooling solution integrated into thermoforming packaging machines. This innovation cools baked goods from 95 °C to around 30 °C in seconds during the packaging process, eliminating the need for bulky cooling spirals or tunnels. Benefits include reduced space requirements, lower energy consumption, and minimized contamination risk, while also boosting production throughput.

The Cooling@Packing system is designed for high-performance applications and supports immediate packaging of products like baguettes, breads, and cookies directly from the oven, maintaining freshness and extending shelf life.

With a strong focus on hygiene, efficiency, and automation, FRITSCH and MULTIVAC aim to offer end-to-end solutions for today’s bakery production challenges.
