Mecatherm and Puratos organized a joint seminar on crusty bread in Barembach, France, on October 26 and 27.
The professionals attending the seminar learned more about trends and innovations in industrial bakery, how to innovate in the field of bread by learning from the expertise of two leaders in the industry.
Theoretical information on standard and artisan bread were materialized through demonstrations at the demo center. The participants could observe the HQ process, a unit in the market industrial process allowing artisan quality bread to be produced at the same price as standard bread.
Puratos presented its Bakevit improver range, as well as the Sapore sourdoughs and its active ingredient, O-tentic, based on natural fermentation, offering the good taste of yesterday’s bread while enhancing its preservation.
This partnership demonstrates the role of innovation in constant improvement in bread quality.
