Givaudan has reached a key regulatory milestone for its natural blue colour, Everzure Galdieria, following a positive scientific opinion from the European Food Safety Authority (EFSA).
The assessment confirms the safety of blue galdieria extract for use as a food colour additive, positioning the ingredient as a potential natural alternative to synthetic Brilliant Blue FCF (E133). The dossier will now move to the European Commission for final authorisation.
Developed by Givaudan Sense Colour in partnership with French biotech firm Fermentalg, Everzure Galdieria is derived from the microalgae *Galdieria sulphuraria*. Produced via fermentation and water-based extraction, the ingredient offers full traceability alongside a shade comparable to spirulina-based blues.
A key differentiator is its acid stability, which expands application potential beyond the limitations of spirulina. This opens opportunities in categories such as beverages and confectionery, where achieving stable natural blue hues has historically been challenging.
Barry Foley, regulatory director at Givaudan Sense Colour, said the EFSA opinion marks an important step forward after extensive testing in food and beverage applications.
The ingredient leverages Fermentalg’s expertise in microalgae fermentation, with a controlled production process designed to ensure consistent quality and scalability while optimising resource efficiency.
According to Nathalie Pauleau, global product manager at Givaudan Sense Colour, EU approval would enable manufacturers to formulate vibrant blue, green and purple shades in acidic products—applications previously difficult to achieve with natural colours. She added that the close match to Brilliant Blue FCF could support reformulation efforts without compromising visual appeal.
Final approval by the European Commission would pave the way for broader adoption across the European food and beverage sector.
