Fringe Program Is Main Attraction at Modern Bakery Moscow 2017

 

The fringe program of Modern Bakery Moscow (March 13-16) has always been an important feature of the fair and, at the edition in 2017, more than 20 events were organized.

The press conference “Trends of development of Russian bakery and confectionery industry” opened the fair. Then the seminar “New Package to Boost Sales” took place, supported by Vatel Marketing and the School of Management for Food Production. 

The International Industrial Academy organized the 10th anniversary symposium “Bread as the basis of a healthy diet” and, together with ZAO “Hleb” (Tver), held the symposium “Innovations in creating smart bakery production”. 

Moreover, the fair saw the second stage of the all-Russia contest “Best bread in Russia 2017”, which included public tasting sessions and the award ceremony.

The National Scientific Institution of Industrial Bakery, in cooperation with the Moscow State University of Technology and Management, organized the conference entitled “Building scientific and human capacity to improve competitiveness of bakery enterprises in current conditions” and a round-table on “Government support of innovations”.

Seminar Dedicated to Confectionery Products

The National Research Institute of Confectionery Industry held a seminar dedicated to all confectionery production features, including products for different population groups, legislation, technologies and control in this field.

As launching your own business attracts many people, so the seminars “Bakery of the 21st century. New trends of 2017” and “Mini-bakery: how to launch your business” generated a great deal of interest among visitors.

The Khleb I Eda School held a master class entitled “Bread basket for a restaurant in combi steamer ovens”, together with Rational Company.

During Modern Bakery Moscow, technologists were able to do a refresher course at the School of Modern Bakers and Confectioners, organized by the Moscow State University of Food Production and the Union of Producers of Food Ingredients.

The Saint-Petersburg Institute of Management and Food Technologies organized the business club “Best regional practices of national bakery” that also attracted visitors.

New Events as an Answer to Market Trends

The opening of the business forum “Effective Management of Own Production in Retail and HoReCa” became a highlight of Modern Bakery Moscow, according to Messe Frankfurt, the event’s organizer. 

Among topics discussed at the business forum were which technological solutions to use, how to optimize the prime cost of production, which products are popular and which ones lose.

WorldSkills Russia national team held training sessions specialized for bakery and confectionery. The best representatives of the extended WorldSkills Russia national team were chosen to participate in the world championship set to take place in Abu Dhabi, October 14-19, 2017.

Modern Bakery Moscow also premiered a series of professional master classes entitled “Modern Sweets & Pastry”, in cooperation with the Exclusive Academy of Culinary Art. The “correct” dessert menu, icing and velour, a perfect showcase with eclairs, a cake that will become a sales hit, large-scale and original decoration – these and many other demonstrations and training sessions took place on the first and last days of the fair.

During four exhibition days, 16,016 professional visitors from 42 countries could see the products demonstrated by 205 exhibitors from 22 countries. There were 147 Russian companies and 58 from outside Russia.

Novelties at the Modern Bakery Moscow 2017

The Packaging Lab, a presentation of ready-made solutions from companies that offer development and production services for bakery and confectionery products, ice cream and pizza, sparked interest among industry professionals. Companies like Integral+, Formacia, Sun-Pack print, Tradepack, Paradigma, Mark-Pack and PTK BIK exclusively presented their packaging solutions in development, materials, technologies and branding.

The next edition of Modern Bakery Moscow will be held March 12-15, 2018.
