IBA 2025: Global Baking Industry Trade Fair Set for Düsseldorf in May

IBA, the world’s leading trade fair for the baking and confectionery industry, will take place in Düsseldorf from May 18-22, 2025, showcasing innovations across 98,000 square meters of exhibition space. A key focus will be artisan bakery, with 19,000 square meters dedicated to craftsmanship and new retail concepts.

Sustainability and efficiency will be in the spotlight, with exhibitors presenting hybrid shop concepts, mobile bakery units, and energy-efficient ovens in Halls 13 and 14. Among the highlights are automated bakery retail solutions and self-order terminals designed to tackle labor shortages while maintaining quality and service.

The German Baker’s Confederation (Zentralverband des Deutschen Bäckerhandwerks e.V.), which represents over 9,200 bakeries and 240,000 employees, organizes the event. “We are committed to securing a strong future for the baking industry in Germany,” said Roland Ermer, the Confederation’s president. Addressing demographic shifts and labor shortages, the Confederation is ramping up initiatives to attract young talent, including its ‘Bake Your Future’ trainee platform and hands-on workshops at the fair.

IBA will also host competitions, including the ‘IBA.UIBC Cup of Bakers’ and the ‘IBA.UIBC Cup of Confectioners,’ with awards ceremonies on May 19 and 22, respectively. The ‘World Championship of Bread Sommeliers’ is scheduled for May 21. Additionally, guided bakery tours around Düsseldorf and training sessions at the IBA.ACADEMY will provide industry professionals with further insights.

Technological advancements in oven construction will be a major theme, as manufacturers present solutions aimed at improving energy efficiency and optimizing baking processes. Innovations include heat recovery systems for shorter baking times and intelligent steam technology for enhanced crust formation.

Coffee and snack concepts will also take center stage, as bakeries explore new revenue streams. “Semi-automatic portafilter machines allow businesses to maintain barista-quality espresso while benefiting from automation,” said Axel Fähnle, Head of Marketing at WMF Professional Coffee Machines.

A new design competition, ‘Bakery of the Future,’ will precede the event, inviting participants to submit forward-thinking retail concepts by March 21, 2025. Winners will be announced at the fair on May 20.

Leading industry suppliers, including MHS Schneidetechnik, Wiesheu GmbH, and Franke Coffee Systems, will be among the exhibitors. More details and registration information are available on the IBA website.
