IBIE Preview: Baker Perkins Brings Equipment for Soft Dough Cookies

Part of Worldbakers’ IBIE SPECIAL EDITION 2022, we interview important exhibitors about what they bring to IBIE, so readers know what to expect at the Baking Expo that takes place between September 18-21, 2022, in Las Vegas. Today we interview Keith Graham, Business Development Manager, Baker Perkins.

Baker Perkins (booth 2800) will focus on new developments in its range of equipment for soft dough cookies and biscuits at IBIE, with an upgraded wire cut machine and two new laboratory scale units on display at the show.

The TruClean wire cut machine has been upgraded to produce up to 300 cuts per minute.  The machine on show will incorporate new cookie weight control technology, providing significant potential for improved profitability. TruWeight assisted weight control reduces variations in piece weights by individually adjusting the output from each die cup.

It will also be fitted with an encapsulation module; this can be fitted to any wire cut to upgrade the machine from a standard unit to do both cookies and encapsulated cookies.

The new laboratory scale wire cut and rotary molder can be used for new product development, ingredient and recipe testing and process troubleshooting.

A Series3 rotary molder will also be on the stand. This achieves consistency at high outputs in environments where accurate control of size, weight and texture are essential. Baker Perkins will also exhibit a comprehensive display of baking oven technology.

Our recent acquisition by Schenck Process Group allows the combination of Schenck material handling technology and Baker Perkins process expertise in complete process lines for the baking industry, from ingredient delivery to creating a product ready for packaging.

Harnessing the joint capability of Schenck and Baker Perkins brings the advantages of an automated line from a single supplier. It was the key driver in the decision to unite the two companies in one organization.
