Paris is preparing to become European capital of bakery with a new edition of Europain taking place from February 3 to 6.
Competition “Masters de la boulangerie” will see18 experienced candidates, who were selected on the basis of the best scores obtained or for displaying the best potential, compete in one of the three following specialties: “Nutritional Bread Making”, “Gourmet Baking” and “Artistic Bread Making”.
Although each loaf of bread or every Viennese pastry can result in a work of art, this bread specialties represent contributions that bread making can bring aesthetically in the artistic domain. It is a 360° creation, which must soar to 1.5- 1.6m, with a diameter of 1-1.1m. For this edition, the theme requires for “Masters de la boulangerie” is “Symbolize a regional and historical scene of celebration, which has significant meaning in your country, in its setting”. This entire piece must be edible and the organizing committee has even introduced a ‘taste quality’ criteria in its scoring grid to evaluate this work of art’s organoleptic value.
Vote the Innovation!
Among exhibitors novelties, 21 innovations have been pre-selected for the Europain Visitor Award.
For the first time, the Europain visitors can vote for their favorite novelty and choose who will be receiving the Europain Visitor Award 2018. Visitors who have applied for badge are eligible to vote. The awards ceremony will take place at the Europain Forum, February 4, 1:00pm.
The forum will showcase four days of exchanges articulated around two categories: keynote and round table presentations held by French and international speakers, experts and managers from all sectors of the industry.
Built around the three main themes of the show: MANUFACTURING/SELLING/ MANAGING, the program will propose short and focused speeches on the three major themes.
It will allow all professionals to benefit from new expertise, discover new business or production models, and find solutions to their production, sales or management challenges. The full presentation agenda is available here! Among presentations, hot topics will be discussed, including:
– ancient and modern wheats (February 3),
– sourdough comeback, Asian market trends (February 4),
– wheat quality and traceability, the bakery revolution: the science in processing (February 5),

The Restaurant Shop / Baker’s Lab is a 200m² space within the “I Selling” sector. This animation is made up of two spaces that feature the manufacturing, management and sale of bread, daily from 10:15am to 6:20pm.
A real and fully operational shop, the Restaurant Shop is equipped with the latest digital and technical innovations. It will allow the visitors to experience a shop with an ergonomic and warm dining area, offering product ideas and innovative sales solutions to explore all the possibilities of bakery catering.
The Baker’s Lab is a full-size bakery where 40-minute demonstrations will be executed by top French and international bakers. As well, in the Baker’s Lab, 15-minute speeches will take place on different themes such as: healthy breads / allergy free, shop solutions, snacking, pastry from a bakery / viennoiserie, classics and revisited, digital, yeasts / sourdoughs, organic / veggie and bread diversity.
A Demonstration with Middle East Flavors
Parisian, but Aleppo-native (Syria), Myriam Sabet worked in finance before turning to pastry. She passed her pastry CAP and attended a training course in Montreal, Canada with a Syrian teacher.
Myriam Sabet returned to France and decided to start her own project: mix the products of both cultures, French and Syrian. Visitors at Europain will be able to taste exclusive creations, where traditional products of the East blend with the know-how of contemporary French pastry, on Lab Intersuc.
New App for Europain 2018
This year, Europain has launched a dedicated mobile application for Android and iOS. Visitors can download and use the application to manage all details of their trip and meetings. The app helps anyone to find and save favorite visitors, identify novelties per stand/product category, select the not-to-be-missed events, and use the interactive map to navigate during the fair.
