New Campaign Encourages Bakers to Use Freeze-Dried Fruit

British bakers will be encouraged to try freeze-dried fruit ingredients in a campaign aiming to promote the use of fresh fruit alternatives, with the benefits of no artificial coloring or flavoring. The range of videos and digital advertising set to run throughout the summer.

Freeze dried replacements such as strawberries, raspberries and apples will be advertised by ingredients supplier Lio Licious as long-shelf life options which are simpler and quicker to use. The more concentrated flavors in freeze dried ingredients also mean bakers only need to use a small amount to replicate the same flavor as fresh fruit, reducing food waste.

Bakers will be presented with a range of recipes where they can swap in freeze dried alternatives, including colorful rainbow yoghurt pots, chocolate apple brownies, cheese and caramelized onion scones and a Mediterranean pasta with freeze dried olives and parmesan.

Freeze dried ingredients are produced by removing the water from the fresh product, creating a tasty alternative product that remains nutritious for up to two years. For home bakers, the ingredients mean cupcakes, brownies and cookies can be given vibrant colors and flavors without the need for artificial food coloring.

Savory ingredients for breads and pastas such as freeze dried olives, cheese and caramelized red onion will also be promoted as alternatives with a longer shelf-life.
